Creamy Pesto Potatoes Recipe

These potatoes are the perfect side dish - a little cheesy, a little sweet, delicious and different.

Creamy pesto mix:

3 tablespoons dried basil

1 teaspoon garlic powder

1/4 cup oil (I use olive oil - you use whatever you like!)

1 cup milk

Preheat oven to 400f.

Chop 5-6 potatoes into 1"-ish cubes. (Just slice it any way you like it, we don't measure here.) Put them in an oven safe baking dish with a lid.

Mix up your creamy pesto. Pour it over your potatoes. Cover with the lid. Bake, covered, for 30-40 minutes, until potatoes are done. Serve and bask in the praise and adoration of your family! (Ok, that last bit might be a stretch, but these are really popular as a dish!)

I love these as a side to a garlic-lime marinated pork chop. The mild cheesy sweetness of the potatoes really sets off the lime-garlic rub of the pork chops, making for a well rounded, flavorful combination.
